Sunflowers are native to North America and the American Indians consumed these sunflower seeds for nutrients and energy. Sunflower seeds remain till today an excellent source of protein and nourishment. There are two types of seeds produced – confection sunflower seeds and non-oil sunflower seeds. Confection sunflower seeds are black with white stripes are the seeds that we eat whole and press for sunflower seed oil. Non-oil sunflower seeds are used for bird and animal feed and is not for human consumption. Sunflower seed oil is pressed from the black seeds as well as the entire flower. This oil is then filtered and purified. The by-product of this refining process yields a waxy deposit that is created into sunflower seed meal and used to feed livestock. Sunflower black seed oil is filled with important minerals and calcium. The oil is light yellow in color, clear and has a pleasant fragrance. Being high in polyunsaturated fat (that is good for you) and having a high smoking point, sunflower seed oil is used widely in cooking.
